One of my favorite little concoctions! When I was making my catering menu I felt like I didn't have enough "different" chicken dishes. After doing some brainstorming, I finally realized I was missing a chicken rollatini! It's an easy yet elegant dish that will impress anyone you're cooking for!
Ingredients:
~ 4 servings (8 rollatinis)
4 chicken breasts sliced thin (~1.5-2 lbs)
Herb Goat Cheese (I love Wellsley Farms Organic)
8 Pieces of Prosciutto
Salt
Pepper
Garlic Powder
Instructions:
Slice your chicken breast thin!
Season both sides with salt, pepper, and garlic powder.
Lay each chicken on a piece of prosciutto.
Add 1-2 tbsp of goat cheese to the center.
Add 2-3 red roasted peppers and roll tightly.
Place sautéed spinach at the bottom of the pan and add your rollatinis on top.
Bake at 450F for 25-30 min or until it is cooked through! (165F internally)
Serve hot and enjoy <3
Tips:
If you don't like spinach, have this with rice or mashed potatoes! Just make sure to oil the bottom of the pan you use for the chicken in the oven.
Too much garlic? opt for a plain goat cheese.
Not a fan of goat cheese? Any soft cheese will work with this dish! Feel free to swap out for ricotta or fresh mozzarella.
