The easiest vegetable to cook and pairs well with almost every dish. If you're looking for a nutrient dense side to go with your meal, this is the one for you. Although it shrinks to 1/8 of its size when you cook it so make sure to buy enough!
Ingredients:
~ 2-3 servings
16 oz baby spinach
4 garlic cloves minced or sliced
2 tbsp extra virgin olive oil
Salt
Pepper
Garlic Powder
Instructions:
Heat up olive oil in a pan over medium low heat.
Add the garlic and sauté for about 2-3 min (make sure to not burn it).
Add your spinach in batches. I start with two handfuls.
Lower the heat to low and put the lid on the pan to steam it for a few minutes.
Once it is wilted add some salt, pepper and garlic powder to taste.
Repeat steps 3-5 until all of the spinach is cooked.
& that's it! Serve with your favorite dish and enjoy <3
