One of my favorite appetizers my mom made at holiday gatherings was her bacon wrapped scallops. It's one of those foods you could have like 15 of and still want more. I remember my brothers and I would sneak some out of the dish before the guests would arrive. I'd end up trying to move around the other ones so it didn't look like any were missing lolol. Anyway - if you're looking for a SUPER easy fish appetizer this is the one for you :)
Ingredients:
~ 12-15 pieces (feeds 3-4 people)
1/2 lb scallops
8 oz of bacon (cut in half)
salt
pepper
garlic powder
Dipping or Drizzling Sauce
1/2 cup of heavy cream (can use dairy free)
1 tbsp dijon mustard
1/2 tsp worcestshire
Instructions:
Preheat Oven to 425F.
Wash the scallops and pat dry.
Cut any of the large scallops in half.
Season the scallops on all sides with salt, pepper, and garlic powder. Just a sprinkle!
Place each scallop piece on a bacon piece and roll it up. Keep it closed with a toothpick and place it on a tray lined with parchment paper.
Bake for 15 minutes or until the bacon is cooked.
While the scallops are cooking add all of your dipping sauce ingredients in a small pot. Whisk together and bring to a low boil. Remove from heat.
When the scallops are done you can plate them. Add a drizzle of the sauce on top or place the sauce in a bowl or cup on the side and enjoy :)
Tips:
Add a squeeze of lemon juice at the end for some extra flavor.
Add seasonings like paprika, chili powder, or cayenne to the scallops before wrapping in the bacon for some spice.
Add some sriracha or spicy seasonings to your sauce for a little kick.
Make around 3 per person if this is for a main appetizer. 1/2 pound is about 8-12 scallops. Sometimes they are big and will need to be cut to fit into the bacon piece and sometimes they are smaller and can be left as is.
