Sourdough Foccacia

The most delicious foccacia bread made right in your kitchen. This garlicky Italian herb foccacia will be the highlight of your meals. Perfect for a side, as a snack, or even a sandwich.


Ingredients:

  • 1/2 cup sourdough starter (right after its peak)

  • 4 cups bread flour

  • 2 tsp salt

  • 1.75 cups lukewarm water

  • 1/4 cup extra virgin olive oil + more

  • 2 tsp Italian Seasoning

  • 5 minced cloves of fresh garlic


Instructions:

  1. Whisk discard and water together in a bowl.

  2. Add the salt and flour. Mix until it makes a rugged dough. Let it sit covered for an hour.

  3. Drizzle some olive oil on the dough and your hands. Perform a set of 10 stretches and folds. Place the dough seam side down in the bowl. Cover for 6-12 hours or until the dough has doubled in size.

  4. During the dough rising process, add the 1/4 cup of olive oil to a small pot with the fresh garlic and Italian seasoning. Cook until the garlic is fragrant. Remove from heat and let it cool down.

  5. Once the dough has risen, drizzle some of the olive oil mixture into a half sheet pan or a 12" x 10" deep dish pan.

  6. Perform a set of stretches and folds on the dough in the bowl. Transfer the dough to the pan and fold it into a rectangle (see video tutorials below).

  7. Cover the dough/pan and wait until the dough doubles in size.

  8. Once it doubles, preheat the oven to 425F. Add the rest of the olive oil mixture to the top of the dough and dimple it with your fingers.

  9. Bake for 25 minutes or until the crust is golden brown. Let cool and then enjoy :)

Tips

  • Want some more flavor? Add other toppings!

    • Some salty options are:

      • fresh grated parmigiana, olives, pepperoni, buffalo chicken, marinara, proscuitto, bacon, red pepper flakes, hot honey, tomatoes, caramelized onions, rosemary, oregano, basil, pesto, chimichurri, sausage, fresh mozzarella, red roasted peppers, red onions, feta, the options are endless!

    • For sweet:

      • Swap the olive oil for coconut oil and the seasonings for cinnamon and nutella!

    • For salty & sweet:

      • fig jam and goat cheese

      • peaches and proscuitto with honey

      • hot honey and pepperoni

  • Store for up to 2 days on your counter or up to a week in the fridge.

  • Pair with a dipping oil made of some Italian seasoning, parm, or salt, pepper, garlic powder, and parsley.

  • Add it to your next charcuterie board!

  • Upgrade your sandwiches by slicing the bread in half longways.
