Breakfast Potatoes

  • 3 tbsp extra virgin olive oil

  • 1 yellow pepper, diced

  • 1 red pepper, diced

  • 5-pound bag of Idaho potatoes, washed and cubed

  • Salt, 1 tsp.

  • Pepper, 1 tsp.

  • Turmeric, 1 tsp.

  • Garlic powder, 1 tbsp.

  • Chilli powder, 1 tsp.

  • Smoked paprika, 1 tsp.

  • Dried parsley, 1 tsp.


  1. Preheat your oven to 425°F (218°C).

  2. In a large bowl, combine the diced peppers and cubed potatoes.

  3. Add in extra virgin olive oil, salt, pepper, turmeric, garlic powder, chilli powder, smoked paprika, and parsley.

  4. Mix well until all the ingredients are evenly coated.

  5. Spread the mixture onto a baking sheet lined with parchment paper.

  6. Bake for 20 minutes, mix, and then bake for another 25 minutes.

  7. Once done, remove from the oven and let them cool for a few minutes.

  8. Serve hot and enjoy your delicious breakfast potatoes!
