Fried Rice

This fried rice recipe is super easy to make! You can cook it with fresh made rice or utilizes leftover rice which means less food waste. Plus, you can customize the ingredients based on what you have in your kitchen.


Ingredients:

~ 6 servings

  • 4 cups of cooked rice (preferably leftover plain rice)

  • 2 carrots, minced

  • 1/4 cup of frozen peas

  • 1 shallot, minced

  • 5 garlic cloves, minced

  • 1 tsp sesame seed oil

  • 1 tsp olive oil

  • 1/4 cup soy sauce

  • 1/4 tsp black pepper

  • 3 eggs


Instructions:

  1. In a large wok or skillet, heat the olive oil and sesame seed oil over medium-high heat.

  2. Add in the minced shallots and garlic cloves, stirring for about a minute until fragrant.

  3. Next, add in the minced carrots and frozen peas, and continue to stir for another minute.

  4. Add the rice, soy sauce, & black pepper. Mix until thoroughly combined.

  5. Push the rice and vegetables to one side of the wok or skillet and crack in the eggs on the other side. Scramble the eggs until cooked through and then mix them with the rice and veggies.

  6. Continue to cook for a few more minutes, until the rice is heated through and slightly crispy.

  7. Serve hot and enjoy your delicious homemade fried rice!

Tips:

  • For an extra protein boost, you can add in some diced chicken or shrimp along with the vegetables.

  • Feel free to use any other vegetables you have on hand, such as bell peppers, mushrooms, or broccoli.

  • To make this recipe vegan, simply omit the eggs and add in some extra tofu or tempeh for protein.

  • You can also switch up the flavor by adding in different sauces like oyster sauce or hoisin sauce.
