Hot Sausage and Broccoli Rabe

This uhmazing hot sausage and broccoli rabe pasta recipe is seriously so delicious and so full of flavor. Your family will absolutely love it, I promise. The combination of the spicy sausage and slightly bitter broccoli rabe creates this incredible balance of flavors that will make your taste buds sing. And get ready for everyone to ask for seconds!


Ingredients:

~5 servings

  • 6 hot sausage links

  • 1 bunch of broccoli rabe

  • 4 garlic cloves, sliced

  • 2 tbsp extra virgin olive oil

  • 2 tbsp marsala wine

  • 1 cup broth

  • sal, pepper, & garlic powder to taste

  • pasta or ciabatta bread for serving


Instruction

  1. First we will prepare the broccoli rabe. Bring a pot of salted water to a boil.

  2. While you wait for the water to boil, clean and cut off the bottom of the broccoli rabe and score it.

  3. Once the water comes to a boil, add the broccoli rabe. Cook until the water turns green, then remove from the pot and save 1/2 cup of the cooking water for the sauce.

  4. If eating with pasta, you can bring the broccoli rabe water back to a boil or use a new pot and bring fresh salted water to a boil.

  5. In a large pan, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Add in the sliced garlic and sauté for about 1 minute until fragrant. Next, add in the hot sausage links and cook for about 5-7 minutes or until they are browned on all sides. Remove the sausage from the pan and slice into 1/4 inch thick pieces.

  6. Add the broccoli rabe, marsala wine, broth, and broccoli rabe water to the pot. Add in salt, pepper, and garlic powder to taste and bring to a simmer.

  7. Add the sausage back to the pan and cook for an additional 3 minutes to allow the flavors to combine.

  8. And now you have your broccoli rabe and hot sausage sauce! Serve it as is or over your choice of pasta or alongside (or on top) some crusty ciabatta bread!

Tips:

  • If you can't find marsala wine, you can substitute it with red or white wine.

  • For a lighter version, you can use chicken or turkey sausage instead of hot sausage.

  • If you don't like spicy sausage, use sweet sausage!

  • This dish also tastes great with some grated Parmesan cheese sprinkled on top!
