A sweet & smokey addition to any dish, sauce, or sangweech. Yes, I know you can buy them in the store, but making foods from scratch is more fun ;)
Ingredients:
4 red bell peppers
5 minced or sliced garlic cloves
Salt
Pepper
Extra Virgin Olive Oil
Fresh Parsley
Instructions:
Preheat your oven to 425F.
Wash and dry off your red peppers.
Add them to a baking pan lined with parchment paper.
Once oven is preheated add in your peppers for 20 min or until the bottom of the peppers are bubbling.
Flip the peppers and cook an additional 15 min.
Allow them to cool (about 20 min) (They will start to deflate).
Once they have cooled you can peel off the skin, then remove the stem and seeds inside. You can add them to a colander to wash off the seeds more easily.
Pull the peppers apart (or slice them with a knife) to whatever size you'd like and add them to a bowl.
Add olive oil, garlic, salt, pepper, and fresh parlsey.
Add it to your favorite dish and enjoy!
Ways to Eat:
Add these to your favorite sangweech for some extra flavor! (my personal favorites: grilled eggplant, goat cheese, red roasted peppers and arugula or grilled chicken, fresh mozzarella, red roasted peppers, arugula, and balsamic glaze)
Use them in my chicken rollatini recipe! (stay tuned)
Blend them in a food processor and add some cream to make it a delicious sauce!
Add them to a salad!
Slice up some of your favorite bread and fresh mozzarella & make a crostini <3
Tips:
If you want to shorten the time, you can make them like my grandma does. She places the oven on high broil and turns them every minute, but you have to stay by the stove and be attentive! Or else you'll burn them.
