Chicken Roast

You see how I roast my own chicken? Very demure. Very mindful.


Ingredients:

~ 5-6 servings

  • 3.5-4 lb Whole Chicken (I used Force of Nature, but it seems as though they are out right now)

  • 2.5 oz packet of Boss Daddy Flava's Lemon Pepper Dust

  • 4 tablespoons of butter divided into thin slices (I love Kate's Unsalted Butter)

  • 2.5 lbs potatoes (cubed)

  • 4 stalks of celery (cubed)

  • 1 lb of carrots (peeled and cubed)

  • 1 Medium Sweet Onion sliced

  • 3 cups of Chicken Broth or Water

  • Salt

  • Pepper

  • Garlic Powder

  • Extra Virgin Olive Oil


Instructions:

  1. Preheat oven to 350F.

  2. Add a drizzle or about 1/3 cup of extra virgin olive oil to the bottom of a deep dish pan.

  3. Clean and cut your veggies (potatoes, celery, carrots, onion)

  4. Season with salt, pepper, and garlic powder to taste and mix.

  5. Clean and pat chicken dry then add on top of veggies.

  6. Loosen the skin on the chicken then add the entire 2.5 oz lemon pepper dust to the chicken. Make sure to get under the skin and on the bottom and crevices.

  7. Add the water or chicken broth. You'll want to half cover the veggies.

  8. Add the butter sporadically to the veggies and on the chicken. Don't forget to get under the skin and in the crevices!

  9. Add a drizzle of olive oil to the chicken and veggies.

  10. Cook the chicken for 2 hours or until temperature reads 165F in multiple places on the chicken . Make sure to baste the chicken or inject with the drippings/broth every 30 min.

  11. Serve and enjoy :)

Tips:

  • Want to use a crockpot? Cook on high for 5-6 hours or low for 8 hours! Make sure to cover the veggies and half of the chicken with broth and water.

  • Invest in a food thermometer so you don't overcook or undercook the chicken.

  • Drizzle some of the juices/drippings on top before serving.

  • Although I do suggest the Boss Daddy Flava's Lemon Pepper Seasoning, if it is unavailable to you, you can use any lemon pepper seasoning or can just season with salt, pepper, garlic powder, parsley and freshly squeezed lemon.

  • Season with your heart!
