La Rosabrina - A Red Roasted Pepper & Tomato Pesto Sauce

I'm sure this dish has been made before, but I decided to name it after me ;) A little recipe I put together from leftovers I had and wanted to get rid of. Shoutout my mom for teaching me to get creative with whatever is left in the fridge instead of throwing it out! This creamy red roasted pepper tomato pesto sauce is an amazing comfort food that you can just throw together in 2 pots and enjoy.


Ingredients:

~ 3-4 servings

  • 2 lbs of protein (I used pork chops, but chicken breast, shrimp, salmon, or steak all work too!)

  • 1 tbsp Butter

  • Extra Virgin Olive Oil

  • 1.5 cups Cherry Tomatoes

  • 1 cup Red Roasted Peppers

  • 1 tbsp Pesto

  • 1/4 cup heavy cream

  • 1/2 lb Pasta (I used angel hair)

  • Salt

  • Pepper

  • Garlic Powder


Instructions:

  1. Add some olive oil (just fill the bottom of the pan, about 1 tbsp) to a cast iron skillet and heat up over medium heat.

  2. Add your protein and season with salt, pepper, and garlic powder to taste. Cook for 10 min if using pork or chicken, 2 minutes for shrimp, and 4 minutes for steak depending on the cut.

  3. Flip and season again with salt, pepper and garlic powder and cook the same timing as before or until cooked through.

  4. Remove the meat from the pan and add it to a dish. Cover with tinfoil or a lid to keep it hawt.

  5. Add the butter and 1 tbsp of olive oil to the same pan. As the butter melts, scrape up the brown bits to incorporate them into the sauce.

  6. Add the tomatoes, red roasted peppers and pesto to the pan and mix.

  7. Cook for 5 min or until the tomatoes are soft.

  8. Add the heavy cream and mix. You'll want to cook this another 5-10 minutes. If you like the sauce thinner you can use a potato masher to make the veggies more saucy or you can just leave it as it is.

  9. If you haven't already, start to boil your water for your pasta and cook according to the box instructions. You'll want to not fully cook the paste since it will cook a little more in the sauce.

  10. Once the pasta is done cooking, drain the water from it and add the pasta to the sauce.

  11. Make sure to mix and coat the pasta in the sauce.

  12. Add your meat back in and cook an additional 3 minutes or until everything is heated again.

  13. Serve hot and enjoy <3
