The Ingredients You'll Need:
2 lbs of boneless skinless chicken breasts
3/4 cup all-purpose flour
6 tbsp extra virgin olive oil
1 tsp salt
3/4 tsp baking powder
1 tsp garlic powder
1 medium shallot, diced
4 cloves of garlic, minced
Bella mushrooms (sliced)
1/2 cup marsala wine
1/2 cup chicken broth
1.5 tbsp flour
3 tbsp butter
Let's Get Cooking:
Start by pounding the chicken breasts to an even thickness, about 1/4 inch thick.
In a shallow dish, mix together the all-purpose flour, salt, baking powder, and garlic powder.
Coat each chicken breast in the flour mixture, shaking off any excess.
Heat a large skillet over medium-high heat and add in the extra virgin olive oil.
Once hot, add in the chicken breasts and cook for 4-5 minutes on each side until golden brown.
Remove the chicken from the skillet and set aside on a plate.
In the same skillet, add in the diced shallot and minced garlic cloves. Sauté for 2-3 minutes until fragrant.
Add in the sliced bella mushrooms and cook for an additional 2-3 minutes until softened.
Pour in the marsala wine and chicken broth, scraping up any browned bits from the bottom of the skillet.
In a small bowl, mix together the 1.5 tbsp of flour with a couple tablespoons of water to create a slurry.
Pour the slurry into the skillet and stir until well combined with the mushroom mixture.
Bring the sauce to a simmer and let it cook for about 5 minutes until thickened.
Once the sauce has thickened, add in 3 tbsp of butter and stir until melted and fully incorporated.
Add the chicken back into the skillet and let it cook in the sauce for a few minutes until heated through.
