Italian Wedding Soup

  • 1 tbsp Extra virgin olive oil

  • 8 cloves of garlic, minced

  • 2 cups diced carrots

  • 2 cups diced onions

  • 1.5 cups diced celery

  • 2 cups water

  • 8 cups chicken broth

  • Mini meatballs (homemade or store-bought)

  • Pastina pasta

  • Chopped spinach

  • Salt, pepper, and garlic powder to taste


  1. In a large pot, heat the extra virgin olive oil over medium-high heat.

  2. Add in the minced garlic and sauté for 1-2 minutes until fragrant.

  3. Next, add in the diced carrots, onions, and celery. Sauté for another 5-7 minutes until the vegetables are soft.

  4. Pour in 2 cups of water and 8 cups of chicken broth. Bring to a boil.

  5. Once boiling, add in the mini meatballs and pastina pasta. Reduce heat to medium-low and let simmer for 10-15 minutes until the pasta and meatballs are cooked through.

  6. Add in the chopped spinach and season with salt, pepper, and garlic powder to taste.

  7. Let simmer for an additional 5-10 minutes until the spinach is wilted and flavors have melded together.

  8. Serve hot and enjoy your delicious homemade Italian wedding soup!

Tips and Tricks

  • For an extra flavor boost, try making your own mini meatballs using a mix of ground beef and pork.

  • If you're short on time, feel free to use store-bought mini meatballs instead of making them from scratch.

  • Don't have pastina pasta? Use any small shape of pasta you have on hand, such as orzo or ditalini.

  • If your soup is too thick, add in a little more chicken broth or water to thin it out.
