You can't go wrong with this insane combination of flavors. Truffle, Pesto, Cauliflower, Red Roasted Peppers, Chicken, all in a warm bowl of soup. Never was a cauliflower girl, but this soup has now surpassed all the others as my number 1 favorite. Looking for an explosion of the world's greatest flavors (thank you to the Italians just kidding not really anyway keep reading) all in one? Look no further. Make this soup for yourself, your friends, your family, your lover and I promise everyone will be getitng up from the table with a full and happy belly.

Ingredients:
about 6-8 servings
1 tbsp olive oil
2 tbsp truffle oil
1 small onion diced
3 tbsp pesto
3.5 cups chicken bone broth
1 head of cauliflower (about 4 cups)
1/4 cup red roasted peppers
2 cups water
1.5 lb chicken breast or tenderloins
1/2 tsp salt (separated, read instructions) + more to taste
1/2 tsp pepper (separated, read instructions) + more to taste
1/2 tsp garlic powder (separated, read instructions) + more to taste
Garnish
croutons
truffle oil
shaved truffle
fresh parsley
parmigiano reggiano
Instructions:
Heat 1 tbsp of truffle oil in a 6 quart stockpot.
Add your chicken and season by eye with a sprinkle of salt, pepper, garlic powder or if not blessed with the gene then with 1/8 tsp of salt, 1/8 tsp pepper, and 1/8 tsp garlic powder.
Cook about 5 minutes and then flip each piece of chicken. Season again by eye with a sprinkle of salt, pepper, garlic powder or if not blessed with the gene 1/8 tsp of salt, 1/8 tsp of pepper, and 1/8 tsp of garlic powder again. Cook another 5 minutes then remove the chicken to a separate bowl or plate to cool.
Add another tbsp of truffle oil + 1 tbsp olive oil + 3 tbsp of pesto to the pan. Scrape up any chicken bits then add the onion. Cook about 5-8 minutes or until the onions begin to become translucent.
Add the cauliflower, red roasted peppers, broth, and water. Mix then bring to a boil on high heat.
Once boiling, lower the heat to medium-high. Cook for 10-15 minutes or until the cauliflower is soft and you can stab it easily with a knife. Turn off the heat. If you have an immersion blender, you can blend up the mixture right in the pot until smooth and there are no chunks. If you do not have an immersion blender, let the soup cool about 10 minutes then blend it in your regular blender until smooth then add it back into the pot.
Once the soup is blended add it back onto the stovetop and place on high heat until it starts to boil.
Shred or dice up your chicken during this time.
Once the soup begins to boil, add the chicken in and bring the heat down to low. Mix the chicken into the soup, place the lid on it and let simmer for 20 minutes.
After 20 minutes, the soup is almost ready! You can taste it at this point to see if it needs any other seasoning. Add a sprinkle or a little less than 1/8 tsp of salt, 1/8 tsp of pepper, and 1/8 tsp of garlic powder. Don't fill the 1/8 tsp all the way up as you don't want to overdo it on the seasonings. Mix, then taste and see what's missing or if it's perfect (which I am sure it will be) go to the next step.
Scoop your hot soup into a bowl and garnish with whatever toppings you like! Croutons, shredded parmigiano reggiano, some fresh parsley and a drizzle of truffle oil was my go to and it was AMAZING, but feel free to get creative <3 Hope you enjoy!
Tips
This soup is perfect for a cold winter day and stores well too! Make in advance and keep for up to 1 week in the fridge! If you want to freeze it place the soup in an air tight container or mason jar (leave about an inch of space because the soup will expand) and freeze in your freezer for up to 6 months.
Don't like cauliflower? Use broccoli instead!
Want to make it a pasta dish? Don't add water to the recipe in the beginning. Boil some pasta in a separate pot then add it to the sauce (or the sauce to the pasta) give it a nice mix and serve with some garlic bread.
