2 carrots
2 celery stalks
1 white onion
5 garlic cloves
1 tbsp extra virgin olive oil
1 tablespoon butter

1/4 tsp black pepper
1 tsp salt
1 tsp garlic powder
1 cup orzo
2 lb of shredded chicken *shred rotisserie chicken from store, bake chicken in oven, use chicken from homemade broth recipe or add raw chicken before pasta*
Juice of 1 medium lemon
2 tbsp fresh parsley
Extra salt, pepper, and garlic powder to taste
Step-by-step Instructions:
Begin by prepping your vegetables. Peel and dice the carrots, celery stalks, and onion. Mince the garlic cloves and set aside.
In a large soup pot, heat the extra virgin olive oil & melt the butter over medium-high heat. Add in the diced vegetables and sauté for 5-7 minutes until they start to soften.
Sprinkle the flour in to the veggies.
Slowly pour in the chicken broth while continuously stirring to combine. Add in the water, black pepper, salt, and garlic powder, and stir.
If cooking chicken in soup, add next.
Bring the soup to a boil, then reduce heat to low and let it simmer for 10 minutes if using pre-made chicken. If cooking chicken in soup, keep on medium heat for 30 minutes or until chicken has an internal temperature of 165F. Take out and shred.
While shredding chicken, add orzo to soup. Cook for 8 minutes.
Add the shredded chicken to the soup and let it simmer for an additional 5 minutes.
Squeeze in the juice of one lemon and stir to combin.
Add fresh parsley and salt, pepper, and garlic powder to taste.
