Some comfort soup for the wintery (or any) months! This recipe had my taste buds dancinnnnn. Thank you to my beautiful Grandmother for sharing her recipe with me!
Ingredients:
~ 6-7 servings
1 lb sweet or hot sausage links (my Grandma says it HAS to be Premio, which I wholeheartedly agree)
2 tbsp olive oil
1 sweet onion diced or minced (your preference)
6 stalks of celery diced or minced (your preference)
4 cloves of fresh garlic minced
15 oz of crushed tomatoes (Grandma says Del Monte is the best. You can either leave them diced, crush with your hands or use an immersion blender. I used the jarred tomato basil sauce my family makes every year)
32 oz of bone broth (regular broth or water works as well. If using water, you will need to add some pepper and garlic powder to the soup)
3 cups of Borlotti or Cannelini Beans (can use two 15.5 oz cans instead. Drain the liquid or keep it. Really up to you)
1/2 lb of Ditallini Pasta (cooked in separate pot)
1 cup of pasta water (from your Ditallini)
Salt to taste
Grated Parmigiana or Pecorino Romano to taste
Instructions:
Preheat your oven to 400F.
Add the sausage to a sheet pan lined with parchment and bake for 20 minutes, flip the meat and then bake another 15 minutes until the outside is crispy. If it still isn't crispy turn the oven on broil and keep an eye on the sausage as to not burn it.
While the sausage is cooking, heat up the olive oil in your stockpot. You'll need a 5.5 or 6 quart pot for this recipe.
Once oil is heated, add the celery, garlic and onion. Cook until soft/translucent.
Add in the sauce and broth then bring to a boil.
Once boiling, add in the beans, bring to a boil, then cover and cook on low for 10 minutes.
While the soup cooks, boil a small pot of salted water for the Ditallini pasta. Once boiling throw in your pasta.
Before draining the pasta, add 1 cup of water to the soup mixture. Stir and cover again. Bring the soup to a simmer (place on low).
Note: Make sure to keep the pasta in its original pot. If you add it to the soup it may soak up the juices and/or break apart from cooking too much. Keep some of the pasta water in the pot when draining or add a little bit of olive oil to the pasta and toss so it doesn't stick.
At this point the sausage should be done. Remove and cut into little pieces (See video below for reference).
Remove the soup lid and add in the sausage. Stir and cook on low for 5 minutes so all of the flavors combine. Taste your soup and see if it needs any salt. If you feel as though it needs salt, start with a sprinkle or a little less than an 1/8 tsp.
Once the soup is to your liking, scoop some pasta into your bowl then add the soup on top. Sprinkle with your grated cheese of choice and enjoy :)
Tips:
Cook the sausage beforehand, so you don't have to do everything at once!
This is the perfect soup to prep early in the day, so you can just throw it together when needed! Chop your veggies and cook your sausage earlier. Store in an air tight container in your fridge until ready to use later.
Use my Chicken Bone Broth Recipe if you want to make it all homemade.
If you don't like sausage you can omit it! If you still want to have more protein in there, opt for chicken sausage or shredded chicken.
Don't like the tomato sauce? Ok, just don't add it. You'll want to substitute the sauce with water or if you make my chicken broth, save the veggies, puree them and use the puree in place of the sauce.
Don't want to bake the sausage? You can grill them outside or on your stove top! Or for some extra flavor in the soup, cook them in your stockpot at the very beginning until each side is browned. Remove and jump to Step 3. Cooking the veggies in the browned bits and sausage juices will definitely elevate the flavors of the dish.
